Simple No Bake Cheesecake
with Harraways NEW Blackcurrant Spiced Apple Oats (WITH IRON & ZINC FOR IMMUNITY)

NEW Blackcurrant Spiced Apple Immunity 850g
Oat crust:
• 1 cup Harraways Blackcurrant Spiced Apple Oats
• 2 Tbsp plus 2 tsp of extra light olive oil
• 1 tsp cinnamon
• 2 Tbsp Maple syrup or runny honey

Cheesecake filling:
• 300g light cream cheese
• 1 Tbsp Maple syrup or runny honey
• 1 tsp vanilla
• 2 Tbsp lemon juice

Sliced kiwifruit or berries
1. Grease silicone cups or if using a large silicone cake/ pie dish (22cm) line with baking paper.

2. To make the crust, blend the oats, oil, cinnamon and maple syrup/ honey until you get a crumbly sticky mixture.

3. To make the Cheesecake filling, in a bowl beat cream cheese, maple syrup/ honey, vanilla, and lemon juice until fluffy and well combined.

4. Spread the crust mixture into either the silicone cups or the large silicone cake/ pie dish. Press mixture down and flatten with a spoon.

5. Spread the filling on top and smooth out with a silicone spatula.

6. Freeze for 2 hours for mini cheesecakes, or 4 hours for large cheesecake.

7. Once out of the freezer, remove from pan/s and top with diced fresh fruit or berries to serve.
