Date and Feijoa Loaf

Rolled Oats
• 5 large Feijoas, peeled and finely chopped
• ½ cup finely chopped pitted dates
• 1/3 cup water
• 2 Tbsp extra light Olive oil
• 2 eggs
• 1 teaspoon vanilla essence
• 1 cup wholemeal flour
• 1 tsp ground ginger
• 1 tsp cinnamon
• 1 teaspoon baking powder
• ½ teaspoon baking soda
• 1 cup Harraways Rolled Oats
1. Preheat oven to 170 degrees Celsius fan bake.

2. Line a loaf tin with baking paper.

3. Place feijoas, dates, water and oil into a small saucepan over a medium heat and bring to the boil. Reduce heat and simmer for 5 minutes. Take off the heat and cool. With a fork mash the mixture to break down lumps.

4. Place feijoa mixture into a bowl and stir in eggs and vanilla essence. Sift flour, spices, baking powder and baking soda into mixture. Add oats and fold to combine.

5. Pour into prepared loaf tin and bake in the oven for 1 hour, or until a skewer when inserted in the centre comes out clean.

6. Remove from oven and place on a cooling rack. Slice and serve.
