Rolled Oats
• 1 cup chopped dates
• 1 chopped apple- this recipe used a soft/ bruised apple- great way to avoid food waste
• ¼ cup extra light Olive oil
• 2 tsp vanilla essence
• Pinch of salt
• 2 eggs
• 2 Tbsp Maple syrup
• ½ ripe avocado- perfect way to use up leftover avocado (even a browned avocado!)
• ½ cup Cocoa powder
• 1/3 cup ground almonds
• 1 cup Harraways oats- Raspberry and Coconut less sugar oats was delicious in this recipe or you can use rolled oats
• 1/3 cup chocolate chips
• 1 teaspoon baking powder
1. Preheat oven to 170 degrees Celsius fan bake. Line a round baking dish (width 24cm) with baking paper.

2. Place dates, apple, oil, vanilla essence and salt in a small saucepan. Heat over a medium heat and stir occasionally. Reduce heat and simmer to soften dates and apple (approximately 10 minutes). Remove from heat and allow to cool.

3. Place the date and apple mixture into a food processor. Add all other ingredients, except the chocolate chips and baking powder, and blend. Scrape down the sides of the bowl to ensure all ingredients are well blended.

4. Fold in the chocolate chips and baking powder and transfer to baking dish.

5. Bake for 30 to 35 minutes (30 minutes if you like it softer and 35 minutes if you like it firmer). Remove from oven and leave to set for 15 minutes before slicing (it helps to wait until it is cool- but you may not have the patience!).

6. Serve with fruit (banana or berries always go well with chocolate), or a dollop of nut butter and thick yoghurt. Delicious warm or cold.
