Gingerbread Oat Pancakes

  • Servings 10 Small Pancakes

Ingredients

  • 1 1/2 cup rolled oats
  • 3 eggs
  • 1/3 cup plain yoghurt
  • 1 banana
  • 1/4 cup of milk
  • 1/2 tsp vanilla
  • 1/2 Tbsp ground ginger
  • 1/2 Tbsp cinnamon
  • 1/4 tsp nutmeg

Method:
Blend the rolled oats. Add the liquid ingredients and continue to blend.

Add the remaining ingredients and blend until the batter is even throughout.

Pour 1/4 cup of the batter into a hot pan and cook for about a minute on each side (or until browned).

Top with pure maple syrup and enjoy!
